Karol Okrasa, one of Poland's most recognisable chefs, found himself in the spotlight after the prices of drinks at his Warsaw restaurant were revealed. The high price of water sparked mixed reactions among internet users. Okrasa addressed the allegations in his podcast Business Class, explaining the mechanics of exclusive dining establishments.

12 zloty for water? Okrasa explains the behind-the-scenes pricing

The restaurant run by Karol Okrasa is located in the centre of Warsaw and is regarded as a place serving dishes of the highest standard. The high prices of the dishes do not surprise anyone, but the rate of 12 PLN for a bottle of water has caused an uproar online. In an interview with Business Class, the chef talked in detail about the costs that go into the final prices on the menu

– We add a lot of other costs to this water that you don’t have when you go to buy it in a shop. Here we have 16 people on board who make sure that this water is served and that it is there,” he explained.

Okrasa stressed that drinks such as water and tea are among the highest-margin products, which is standard in the catering industry. –

Behind this water are both cooks and people, the premises and electricity. It all has to come together,” he added.

Profit from beverages key to restaurant operation

Karol Okrasa makes no secret of the fact that beverage sales are an important source of income for restaurants. As he pointed out, those who decide to run venues are quick to point out that it is the drinks that bring in the most profit. – “They have to make money on something, it’s the most frowned upon product, ” he explained.

Michelin star dreams put on hold

In the podcast, Karol Okrasa also addressed the subject of winning a Michelin star – a prestigious accolade in the world of gastronomy. He admitted that, although it is his ambition, at the moment he does not intend to get involved in the fight for this distinction.

I am very vain, I would like it very much and I think I know what I would have to do to at least fight hard for it. Today, I am at such a stage that I don’t want to fight for it,” he confessed.

At the moment, the chef is concentrating on other projects, but he does not rule out that in the future he will devote himself fully to achieving this goal.

Prices in gastronomy under scrutiny

Although the price of 12 zlotys for water in Okrasa’s restaurant seems exorbitant, the chef points to the need to balance costs in order to maintain the high standard of service offered. Will this approach convince customers? Time will tell. One thing is certain – the subject of prices in restaurants does not cease to stir emotions.
